This stage is when we transform our wash into a whiskey and is the defining characteristic of Irish style whiskeys. Distilling is essentially the process of separating the alcohol from the water to create a desirable high strength alcohol that will deliver an excellent quality whiskey after maturing in oak casks. We call it Triple Pot Distilling because the final liquid has been distilled 3 times, and each distillation takes place in a separate copper pot still.” – O’Shaughnessy

At 55% alcohol by volume (110 proof), this whiskey starts with a vibrant, spicy, and fruity nose, then leads into sweetness with orchard, tropical fruits, and baking spices. 

The finish is of sweet spices, charred oak, and barley grains; this shows the depth and balance that characterizes Keeper’s Heart Whiskey.

Keeper’s Heart Irish Whiskey + Bourbon

This Irish + Bourbon whiskey is fairly unique and unlike other spirits you’ve probably tried. They combine the sweet, rich taste of bourbon with the earthy spices of single Irish pot still whiskey and butterscotch sweetness of Irish grain whiskey.
