  • Enter the barrel for aging at no more than 125 proof (62.5% alcohol by volume)
  • Be bottled at a minimum of 80 proof (40% alcohol by volume).

These distinctions might seem superfluous, but they highlight the unique qualities that make bourbon stand out among other types of whiskey.

How Is Bourbon Made?

The production of bourbon involves a meticulous process that combines science, artistry, and tradition. Here are the essential steps in making this beloved spirit:

Step #1: Mashing and Fermentation

The grains, including corn (at least 51%, like we mentioned), malted barley, and rye or wheat, are ground and mixed with water to create a mash. Enzymes convert the starches into fermentable sugars, then yeast is added to the mash. This addition ferments the mixture over several days, converting the sugars into alcohol.

Step #2: Distillation

Next, the fermented mash is distilled in stills, typically using a continuous column still with copper plates or a copper pot still. Distillation separates the alcohol from the impurities and concentrates the flavors.

Step #3: Aging

After distillation, the currently clear spirit is placed in new, charred oak barrels for aging (remember this is an important distinction that makes this bourbon, not whiskey). The bourbon must age for a minimum of two years to be labeled as “straight bourbon,” but many premium bourbons are aged for much longer. During aging, the bourbon absorbs flavors from the oak, developing complexity and smoothness.
