During distillation, Espolón uses both pot and column stills to produce a unique tequila; Espolón also claims that they take unique fractions from the distillation process and that this contributes to their signature taste. For aging, casks are filled at lower ABV; this way, Espolón doesn’t have to water the final product down as much. They say this helps the tequila maintain more of its flavor.
